- 2 medium chicken breasts, boneless, skinless, bite size pieces
- 2 cup barbecue sauce
- 1/4 cup orange marmalade
- 1/4 cup water, or chicken broth
Instructions
- Cube the chicken and place it in the Instant Pot with barbecue sauce and water or chicken broth.
- Stir well to coat the chicken pieces evenly.
- Secure the lid and close the steam valve. Set the Instant Pot to high pressure for 4 minutes.
- Once cooking is complete, do a quick release and carefully remove the lid. Switch the Instant Pot to the sauté function.
- To thicken the sauce, mix 1 tbsp of cornstarch with a bit of hot barbecue sauce from the pot until smooth. Stir this mixture back into the pot.
- Stir in the orange marmalade and let the mixture bubble for about 2 minutes, stirring occasionally.
- Turn off the Instant Pot and serve the chicken over rice.
Notes
For extra flavor, consider adding 1/2 cup chopped onion and 3 tbsp soy sauce in step 1.
For thicker sauce, adjust cornstarch according to your preference.
If making a larger batch, simply double the ingredients used.
