- 40 oz vegetable broth
- 2 cup split peas, dry, uncooked
- 1/2 small onion, diced
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 2 tbsp olive oil
- 1 1/2 tsp salt
- 1 tsp garlic powder
- 1 cup ham, diced, or add 1 ham hock
Instructions
- Set the Instant Pot to sauté mode and add olive oil, diced onions, and ham.
- Cook for a few minutes until the onions soften and the ham releases its juices to enhance the flavor.
- Turn off the sauté mode.
- Add all other ingredients and mix well to dissolve the salt (optional to wait on salt until the end). If using a ham hock, place it in the center.
- Seal the lid and close the steam valve.
- Cook on high pressure for 17 minutes set to manual.
- Afterward, let the steam naturally release for 5 minutes, then slowly release the remaining steam.
- Stir well and serve. The soup will thicken over time. Garnish with cheese if desired, and add more broth to adjust consistency as needed.
Notes
Store leftovers in the fridge for up to 3 days; the soup thickens over time.
Feel free to use vegetable broth for a vegetarian option, or opt for chicken broth for added flavor.
