- 1 lb chicken diced
- 1 large green bell pepper diced
- 1 onion diced
- 1 lb andouille smoked sausage thinly sliced
- 4 1/2 cups chicken broth
- 1 1/2 cups tomato sauce
- 1 14.5 oz can diced tomatoes with green chilies undrained
- 1-2 tbsp cajun seasoning
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 1 tbsp onion powder
- salt and pepper to taste
- 1 lb linguini pasta
- 1 lb shrimp uncooked, peeled, and deveined
- fresh cilantro leaves (optional), for serving
Instructions
- Heat oil in a dutch oven over medium heat. Add chicken and cook until seared on the outside but not fully cooked.
- Stir in the remaining ingredients, reserving the shrimp for later.
- Bring the mixture to a boil, then lower heat to maintain a gentle simmer.
- Incorporate the shrimp into the pot and stir well. Continue to simmer for about 20 minutes until the pasta reaches al dente.
- Serve the jambalaya in bowls and garnish with fresh cilantro if desired.
Notes
Feel free to adjust the level of cajun seasoning to suit your taste.
Fresh cilantro adds a nice touch, but it can be omitted if preferred.
For added flavor, let the dish sit for a few minutes after cooking before serving.
