- 4 large egg yolks
- 3/4 cup key lime juice
- 1/8 teaspoon salt
- 1 cup heavy cream
- 1/3 cup powdered sugar
- 1 teaspoon vanilla bean paste
- Limes or key limes, optional, to zest as garnish
Instructions
- Preheat the oven to 350°F (176°C).
- Lightly spray a 9-inch pie dish with cooking spray and set it aside.
- In a bowl, combine graham cracker crumbs, brown sugar, granulated sugar, and salt.
- Pour in the melted butter and mix until evenly coated.
- Press the crumb mixture into the bottom and up the sides of the prepared pie dish.
- In another bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and remaining salt until smooth.
- Pour the lime mixture over the crust and bake for 15 minutes.
- Remove the pie from the oven and let it cool before chilling in the refrigerator for at least 2 hours.
- For the topping, beat the heavy cream, powdered sugar, and vanilla bean paste until stiff peaks form.
- Spread the whipped cream over the cooled pie and garnish with lime zest if desired.
