Description
This homemade lemon curd boasts a delightful balance of tart and sweet flavors, featuring fresh lemon juice, eggs, and butter for a luscious texture. Perfect for topping desserts or spreading on toast, it’s a simple yet elegant addition to any meal.
Ingredients
Scale
- 1 cup granulated sugar
- 3 large eggs
- 1 cup fresh lemon juice*
- zest from 3 lemons
- ½ cup unsalted butter, melted and cooled slightly
Instructions
- Combine sugar and eggs in a microwave-safe bowl, whisking until smooth.
- Add lemon juice, lemon zest, and melted butter, whisking until well mixed.
- Microwave the mixture for 5 minutes, whisking well after each minute. Towards the end, whisk every 15-30 seconds, ensuring the mixture does not boil to prevent curdling.
- Once thick enough to coat the back of a wooden spoon, remove from the microwave and pour into sterile jars.
- Let the lemon curd cool before storing in the fridge; it will thicken further as it cools, typically taking several hours or ideally overnight.
Notes
Ensure the mixture does not boil during cooking to prevent the eggs from curdling.
Sterilizing jars helps in preserving the curd for a longer time.
This lemon curd can be used in various desserts, as a topping, or enjoyed on its own.
