- 1/3 cup extra-virgin olive oil
- 2 pounds chicken
- 1 teaspoon salt
Instructions
- In a medium bowl, combine the lemon zest, lemon juice, crushed garlic, cider vinegar, Dijon mustard, lemon pepper, and oregano, whisking until well mixed.
- Gradually whisk in the olive oil until the marinade is smooth and emulsified.
- Pound the chicken to an even thickness for uniform cooking. Pat dry and place in a gallon-sized zip-top bag, seasoning with 1 teaspoon salt.
- Pour the marinade over the chicken, coating it thoroughly. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
- Cook the chicken on a grill, in a sauté pan, or in the oven until fully cooked, reaching an internal temperature of 165°F.
