- 12 eggs
- 1 cup cottage cheese
- 10 burrito-sized tortillas
- 1 cup cheddar cheese, shredded
Instructions
- Cook the chosen meat in a medium skillet over medium heat until fully cooked. Use a slotted spoon to transfer it to a bowl.
- In the same skillet, add your selected vegetables and a pinch of salt. Sauté until softened, about 3-5 minutes.
- In a large bowl, whisk together the eggs and cottage cheese, seasoning with a bit of salt and pepper. Pour this mixture into the skillet with the vegetables and scramble until fully cooked.
- To assemble the burritos, place one tortilla on a flat surface. Add ¾ cup of the egg mixture, followed by 2 tablespoons of your cooked meat and 2 tablespoons of shredded cheese.
- Fold in the sides of the tortilla and roll it up tightly. Continue this process until all ingredients are used.
- For meal prep, wrap each burrito in foil and place them on a baking sheet in the freezer to prevent sticking. Once frozen, transfer them to a plastic bag or freezer-safe container; they will last up to 2 months.
