  • 1 lb meat (chicken sausage, bacon, ground beef, etc.)
  • 2 cups veggies (tomatoes, zucchini, bell pepper, red onion, mushrooms)
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded


Instructions

  1. Cook the chosen meat in a medium skillet over medium heat until fully cooked. Use a slotted spoon to transfer it to a bowl.
  2. In the same skillet, add your selected vegetables and a pinch of salt. Sauté until softened, about 3-5 minutes.
  3. In a large bowl, whisk together the eggs and cottage cheese, seasoning with a bit of salt and pepper. Pour this mixture into the skillet with the vegetables and scramble until fully cooked.
  4. To assemble the burritos, place one tortilla on a flat surface. Add ¾ cup of the egg mixture, followed by 2 tablespoons of your cooked meat and 2 tablespoons of shredded cheese.
  5. Fold in the sides of the tortilla and roll it up tightly. Continue this process until all ingredients are used.
  6. For meal prep, wrap each burrito in foil and place them on a baking sheet in the freezer to prevent sticking. Once frozen, transfer them to a plastic bag or freezer-safe container; they will last up to 2 months.
  7. Alternatively, wrapped burritos can be stored in the fridge for up to 1 week.
  8. To reheat, microwave the burritos until heated through or bake them in the oven at 375°F for 15-20 minutes.
