Description

This Meatloaf Without Breadcrumbs combines the savory goodness of ground beef and oats for an easy, flavorful meal. Perfect for a quick dinner or a comforting family dish, it’s sure to impress with its delicious blend of ingredients and simple preparation.


Ingredients

  • 2 lbs ground beef
  • 2 cup old fashioned oats
  • 3 large eggs
  • 1 tbsp worcestershire sauce
  • 1/4 cup milk, more or less depending on texture of meat mixture, you want thick and not super sticky
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp thyme
  • 1/2 small onion, diced
  • 1/4 cup tomato paste
  • 3/4 cup ketchup
  • 2 tbsp brown sugar
  • 2 tbsp mustard
  • 2 tbsp white vinegar


Instructions

  1. Chop the onion and mix it with ground beef in a medium-sized bowl.
  2. Add the tomato paste and Worcestershire sauce to the beef mixture, along with garlic powder, salt, pepper, and thyme, and stir well.
  3. Incorporate the eggs and mix in the oats. Then fold in the milk until the texture is thick yet not overly sticky.
  4. Transfer the meat mixture into a 9×5 pan and set aside.
  5. In a separate small bowl, combine the topping ingredients: ketchup, brown sugar, mustard, and vinegar, adding water to achieve a smooth consistency similar to BBQ sauce.
  6. Spread half of the topping mixture over the meatloaf.
  7. Place the loaf pan on a small sheet pan to ensure it sits flat and to catch any drippings during baking.
  8. Bake in the oven at 350°F for 20 minutes, then add the remaining topping mixture on top and bake for an additional 20 minutes, totaling 40 minutes, or until the center reaches 160°F.

Notes

Feel free to adjust the amount of milk based on the consistency of the mixture you desire.
Adding diced vegetables, like bell peppers, can enhance the flavor even further.
Ensure the meatloaf reaches an internal temperature of 160°F for safe consumption.
