Ingredients
- Chopped Carrots (1 cup)
- Medjool Dates (3 large, pitted)
- Dried Apricots (8, pitted)
- Maple Syrup (2 Tbsp)
- Vanilla Extract (1 tsp)
- Rolled Oats (¾ cup)
- Coconut Flour (¼ cup)
- Ground Spices (½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger)
- Desiccated Coconut (2-4 Tbsp for rolling)
- Unsweetened Apple Sauce (2 Tbsp, optional)
Instructions
- Process the carrots in a food processor until finely shredded and set aside.
- Blend Medjool dates, dried apricots, and maple syrup until a sticky paste forms.
- Mix in the shredded carrots, optional applesauce, vanilla extract, rolled oats, coconut flour, and spices until combined into a sticky dough.
- Roll the mixture into golf-ball-sized spheres, about 16 balls.
- Coat each ball in desiccated coconut for added flair.
- Chill in the refrigerator for 15 minutes if a firmer texture is desired.
