Ingredients

  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) light or dark brown sugar
  • 1/3 cup (66g) granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon salt
  • 3 cups (270g) old-fashioned rolled oats
  • 1 1/2 cups (225g) raisins


Instructions

  1. Cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until smooth, about 2 minutes.
  2. Add the eggs and vanilla extract; mix on high until fully combined, about 1 minute. Scrape down the bowl and mix again if needed, then set aside.
  3. In another bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.
  4. Combine the dry ingredients with the wet mixture and mix on low speed until incorporated.
  5. Fold in the rolled oats and raisins gently.
  6. Chill the dough in the refrigerator for 30 to 60 minutes.
  7. Preheat your oven to 350°F and line two baking sheets with parchment paper or baking mats.
  8. Scoop about 1.5 tablespoons of dough per cookie and place them 2 inches apart on the prepared baking sheets.
  9. Bake for 11-13 minutes until golden brown, although the centers may appear slightly underbaked as they will continue to cook on the sheet. Let the cookies sit on the baking sheets for 3-5 minutes before transferring them to a wire rack.

Notes

For chewier cookies, do not overbake; they should appear soft in the center.
You can use quick oats if you prefer, but the texture may vary slightly.
Storing cookies in an airtight container will keep them fresh for longer.
