  • ¾ cup saltine crackers crushed

  • 1 teaspoon old bay seasoning
  • ½ tablespoon italian seasoning
  • 1 cup vegetable oil
  • parsley for garnish

Instructions

  1. In a large mixing bowl, combine the salmon, crushed saltine crackers, minced garlic, egg, pepper, salt, onion powder, old bay seasoning, and italian seasoning. Mix well.
  2. Cover the mixture and refrigerate for about 20 minutes. This helps the crackers absorb moisture and keeps the patties intact.
  3. Shape the mixture into patties, approximately 2 inches wide and ½ inch thick. Place them on a plate.
  4. Heat vegetable oil in a large skillet over medium-high heat, about ⅓ inch deep. This will create a crispy edge on the patties.
  5. Fry the salmon patties for 3-4 minutes on each side until golden brown. Avoid overcrowding the pan and fry in batches if necessary.
  6. Transfer the cooked patties to a plate lined with paper towels to drain excess oil.
  7. Serve warm and garnish with parsley and lemon wedges.
