This One-Pot Tie-Dye Pasta with Chicken is a flavorful, comforting dish that’s quick to prepare. Creamy coconut milk and tangy marinara sauce create a delicious blend, while the pesto adds a vibrant touch. Perfect for a simple weeknight dinner that tastes gourmet!


Ingredients

  • 8-10 oz pasta (fusilli, penne or farfalle work best for the tie-dye look)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup full-fat coconut milk (or heavy cream if preferred)
  • 1 cup marinara sauce
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • 1 to 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup basil pesto (store-bought or homemade)
  • ½ cup freshly grated parmesan (plus more for topping)
  • fresh basil for garnish (optional)


Instructions

  1. Pat the chicken dry and season with garlic powder, paprika, salt, and pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Cook the chicken for 4–5 minutes on each side until golden and cooked through.
  4. Remove the chicken from the pan and let it rest for 5 minutes, then slice into bite-sized pieces.
  5. In a large pot or deep skillet, heat additional olive oil over medium heat.
  6. Add minced garlic and sauté for about 30 seconds until fragrant.
  7. Stir in the pasta, chicken broth, coconut milk, marinara sauce, salt, pepper, and Italian seasoning.
  8. Bring the mixture to a gentle boil, then reduce to a simmer.
  9. Cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and the sauce thickens. Add more broth if needed.
  10. Stir in the parmesan until melted and creamy.
  11. Gently fold in the sliced chicken until well mixed.
  12. Dollop pesto on top in random spoonfuls.
  13. Lightly drag and swirl the pesto through the pasta for a tie-dye effect, maintaining visible green ribbons.
  14. Serve with extra parmesan, fresh basil, and cracked black pepper.

Notes

For best flavor, use freshly grated parmesan.
Feel free to adjust spices according to your taste.
Add more or less red pepper flakes for desired heat.
