Description

Ingredients

  • 2 tablespoons soy sauce
  • 3 tablespoons water (or fish sauce)
  • 5 tablespoons light brown sugar
  • 2 tablespoons tamarind paste (or lime juice)
  • 1 tablespoon lime juice
  • 1 tablespoon chili sauce
  • 3 tablespoons peanut butter
  • 8 ounces udon noodles (or pad thai noodles)
  • 14 ounces extra firm tofu (cut into ½" cubes)
  • 4 tablespoons peanut oil (divided)
  • ½ teaspoon garlic powder
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon ground ginger
  • 1 tablespoon minced garlic
  • 1 cup carrots (julienned)
  • ¼ cup green onions (finely sliced)
  • 2 eggs
  • 1 ½ cups bean sprouts (4.5 ounces)
  • ¼ cup peanuts (crushed)
  • ¼ cup cilantro (chopped)


Instructions

  1. Bring a large pot of water to a boil.
  2. Add the noodles and cook according to package directions. Once done, drain them but do not rinse.
  3. In a bowl, mix the soy sauce, water (or fish sauce), light brown sugar, tamarind paste (or lime juice), lime juice, and chili sauce until well combined.
  4. In a large pan, heat 2 tablespoons of peanut oil over medium heat.
  5. Add the cubed tofu and cook until golden brown on all sides. Remove and set aside.
  6. In the same pan, add the remaining peanut oil and sauté the minced garlic, garlic powder, salt, and ground ginger for a minute.
  7. Stir in the carrots and cook for 2–3 minutes until slightly softened.
  8. Push the veggies to one side, crack the eggs into the pan, and scramble them.
  9. Once the eggs are cooked, add the cooked noodles, the tofu, and the bean sprouts.
  10. Pour the prepared sauce over the mixture and toss everything together until well coated.
  11. Garnish with green onions, crushed peanuts, and cilantro before serving.

Notes

Feel free to substitute udon noodles with pad thai noodles if available.
Adjust the chili sauce to your spice preference.
For additional crunch, top with more crushed peanuts.
