- Combine powdered sugar, peanut butter, butter, and 2 tablespoons of water in a mixing bowl.
- Beat on low speed until a dough forms, adding more water as needed for consistency.
- Line an 8" or 9" square pan with foil and spray it with cooking spray.
- Press the peanut butter mixture into an even layer and chill for 30 minutes.
- Use the foil edges to lift the mixture from the pan, then cut out egg shapes with a cookie cutter.
- Place the eggs on a parchment-lined sheet and freeze for 30 minutes.
- In a microwave-safe bowl, combine chocolate chips and shortening, microwaving in intervals until melted and smooth.
- Dip each egg in the melted chocolate, tapping off excess, then place back on the parchment sheet.
- Drizzle any remaining chocolate over the eggs using a spoon or piping bag.
- Allow the chocolate to firm before serving, and store in an airtight container for up to 5 days.
