Ingredients
Scale
- 1 tablespoon unsalted butter
- ½ cup finely diced red bell pepper
- ½ cup finely diced green bell pepper
- 1 medium yellow onion finely diced
- 16 oz pillsbury crescent rolls
- ½ cup mayo
- 2 garlic cloves minced
- 1 tablespoon dijon mustard
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 lb thinly sliced deli roast beef
- 12 slices provolone cheese
- 2 large eggs beaten
- 1 tablespoon grated parmesan cheese
Instructions
- Preheat the oven to 350°F and spray a 9×13 baking dish with cooking spray.
- Melt the butter in a large pan over medium-high heat and add the diced red and green bell peppers along with the onion. Sauté until softened, then set aside.
- Unroll one package of crescent rolls and press it into the bottom of the prepared baking dish, pressing it up the sides about ½ inch.
- In a bowl, mix together the mayo, minced garlic, dijon mustard, salt, and pepper, then spread evenly over the crescent dough.
- Layer 6 slices of provolone cheese on top of the mayo mixture.
- Add the sliced deli roast beef evenly over the cheese.
- Top the roast beef with the sautéed peppers and onions.
- Place the remaining 6 slices of provolone cheese on top.
- Unroll the second container of crescent rolls, rolling them out to fit over the fillings, and pinch any seams closed.
- In a small bowl, mix the beaten eggs and grated parmesan, brushing this mixture over the top of the crescent dough.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown and cooked through.
- Allow to cool for 10 minutes before slicing and serving.
Notes
For an extra kick, consider adding jalapeños to the sautéed peppers.
Feel free to substitute roast beef with chicken or turkey for a variation.
These squares can be made ahead of time and reheated for serving.
