- 3-4 medium beets
- 1 cup water
- 1 cup apple cider vinegar
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon pickling spices
Instructions
- Remove greens from the beets, leaving an inch of stem. Wash and scrub clean.
- Place beets in a saucepan, cover with water, and simmer until fork-tender (30-45 minutes). Let cool before handling.
- In a separate saucepan, combine water, apple cider vinegar, sugar, salt, and pickling spices. Bring to a boil, stirring until sugar and salt dissolve. Remove from heat.
- Transfer cooked beets to an ice water bath for 5-10 minutes. Peel off skins, then cut beets into half-moon shapes. Pack into jars.
- Place sliced beets into clean glass jars with lids.
- Let brine cool until warm, then pour through a fine mesh sieve into the jars, ensuring beets are submerged.
- Cool to room temperature, cover, and refrigerate. For best flavor, wait 24-72 hours before consuming.
Notes
Be careful not to pour the hot brine directly onto the beets, as this can make them mushy.
