Description

This Pimento Cheese is a delightful blend of creamy textures and robust flavors, featuring sharp cheddar, colby jack, and zesty spices that make it an ideal spread for appetizers or snacks.

Ingredients

Scale
  • 6 ounce cream cheese, room temperature
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded colby jack cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 3 tablespoons chopped pimentos

Instructions

  1. In a medium bowl, whip the cream cheese with a hand mixer until light and fluffy.
  2. Add the cheddar, colby jack, mayonnaise, cayenne pepper, garlic powder, kosher salt, and fresh ground pepper, mixing on medium speed until well blended.
  3. Gently fold in the chopped pimentos to combine, then transfer to an airtight container.
  4. Store in the refrigerator until ready to use; it lasts up to 3 months.

Notes

For added flavor, let the spread chill in the fridge for at least an hour before serving.
This spread can be used on crackers, sandwiches, or even as a topping for vegetables.
