Description

Ingredients

  • ¾ cup granulated sugar
  • ⅓ cup all-purpose flour
  • 20 oz. can pineapple tidbits, drained (reserve 6 tbsp pineapple juice)
  • 20 oz. can crushed pineapple, fully drained
  • 2 cups shredded sharp cheddar cheese
  • 1¾ cups crushed ritz crackers
  • ½ cup regular salted butter, melted


Instructions

  1. Preheat your oven to 350°F and grease a 2-quart casserole dish with butter or nonstick spray.
  2. In a large mixing bowl, whisk together the granulated sugar and all-purpose flour until well blended.
  3. Stir in the drained pineapple tidbits, fully drained crushed pineapple, shredded cheddar cheese, and reserved pineapple juice. Mix until no white flour patches remain.
  4. Pour the mixture into the greased casserole dish and spread it out evenly.
  5. In a separate bowl, mix together the crushed Ritz crackers and melted butter until fully combined. Sprinkle this mix evenly over the pineapple mix.
  6. Bake uncovered in the preheated oven for 30 minutes or until golden brown on top.
  7. Allow the casserole to stand for 10 minutes to thicken before serving.

Notes

Feel free to substitute the sharp cheddar cheese with your favorite cheese for a different flavor.
You can add a sprinkle of cinnamon for a warm, spiced flavor.
Make sure the crushed pineapple is well-drained to avoid excess moisture in the casserole.
