- ⅓ cup all-purpose flour
- 20 oz. can pineapple tidbits, drained (reserve 6 tbsp pineapple juice)
- 20 oz. can crushed pineapple, fully drained
- 2 cups shredded sharp cheddar cheese
- 1¾ cups crushed ritz crackers
- ½ cup regular salted butter, melted
Instructions
- Preheat your oven to 350°F and grease a 2-quart casserole dish with butter or nonstick spray.
- In a large mixing bowl, whisk together the granulated sugar and all-purpose flour until well blended.
- Stir in the drained pineapple tidbits, fully drained crushed pineapple, shredded cheddar cheese, and reserved pineapple juice. Mix until no white flour patches remain.
- Pour the mixture into the greased casserole dish and spread it out evenly.
- In a separate bowl, mix together the crushed Ritz crackers and melted butter until fully combined. Sprinkle this mix evenly over the pineapple mix.
- Bake uncovered in the preheated oven for 30 minutes or until golden brown on top.
- Allow the casserole to stand for 10 minutes to thicken before serving.
