  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups Greek yogurt or cottage cheese
  • 2 teaspoons baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2-3/4 cups pizza sauce
  • 1 cup shredded mozzarella cheese, more to taste
  • Toppings: Mini pepperoni, cooked crumbled sausage, diced veggies (optional)


Instructions

  1. Preheat the oven to 375°F and prepare a 12-cup muffin tin by spraying it with oil or lining it with parchment liners. A silicone muffin pan is recommended.
  2. In a large bowl, mix together the flour, baking powder, garlic powder, Italian seasoning, and salt.
  3. Add the Greek yogurt or cottage cheese and mix initially with a spoon. Then, use your hands to form a dough ball. If the dough is too sticky, gradually add 1-2 tablespoons of flour until workable.
  4. Divide the dough into 12 equal pieces, roughly the size of a golf ball.
  5. Shape each piece by pressing it into the muffin tin, flattening the base and slightly pressing it up the sides to create a cup.
  6. Fill each cup with approximately 1 tablespoon of pizza sauce, adding 1-2 tablespoons of shredded cheese and any additional toppings you like.
  7. Bake for 18-22 minutes, or until the tops are golden brown and the cheese has melted.
  8. Allow to cool for at least 5 minutes before removing from the tin and serving.

Notes

For extra flavor, consider adding herbs or spices to the dough itself.
