Description

These Portuguese custard tarts are a delightful blend of flaky pastry filled with rich vanilla custard, perfect for any occasion or craving. They’re simple to make and utterly scrumptious!

Ingredients

Scale
  • 4 large egg yolks
  • 6 tbsp sugar (about 4 oz)
  • 1 heaped tbsp cornstarch
  • ½ tsp vanilla powder or extract
  • ½ tsp cinnamon
  • 1 ¼ cups whole milk
  • 2 strips lemon zest
  • 8 oz puff pastry
  • pinch of salt

Instructions

  • Whisk egg yolks, sugar, cornstarch, vanilla, and cinnamon in a saucepan.
  • Gradually pour in milk while whisking to combine; add lemon zest.
  • Cook over medium heat, whisking until thickened (5-7 minutes).
  • Prepare muffin tin by greasing it and preheat oven to 250°C/480°F.
  • Roll out puff pastry and cut discs for the muffin cavities; press them in.
  • Fill pastry shells with custard about ¾ full and bake for 7-10 minutes until blistered.
  • Cool in molds for 5 minutes, then transfer to a wire rack.

Notes

Use room temperature ingredients for a smoother custard texture.
For dairy-free, substitute whole milk with almond milk or oat milk.
These tarts can be prepared ahead of time and baked fresh for serving.
