These potstickers are a delightful blend of tender pork and finely chopped napa cabbage, all wrapped up in a crispy shell. Quick to prepare and cook, they’re perfect as a quick dinner or for sharing with friends. With the right mix of seasonings and garnishes, these little dumplings pack a flavor punch that will keep you coming back for more.

- 1 ½ cups napa cabbage, very finely chopped
- 1 teaspoon salt, divided
- ½ lb. ground pork
- 4 green onions, thinly sliced
- 2 tablespoons soy sauce
- 2 teaspoons rice wine
- 2 teaspoons cornstarch, for binding
- 1 teaspoon toasted sesame oil
- 1 teaspoon honey
- 1 clove garlic, minced
- ½ teaspoon ground ginger
- ½ teaspoon white pepper
- 30 dumpling wrappers, plus extra
- ½ cup water per batch, or chicken broth
- 4-6 tablespoons peanut oil, or alternatives like canola, vegetable, avocado, or olive oil

- Chives, or green onions
- toasted sesame seeds
Instructions
- Use a large nonstick skillet with a tight-fitting lid.
- Place the cabbage on a paper towel-lined plate and sprinkle with half the salt. Let it sit for 15 minutes, then squeeze out excess moisture.
- Combine the remaining filling ingredients, including the cabbage, in a large bowl.
- Take 1-2 dumpling wrappers at a time to fill. Keep the rest covered to prevent drying.
- Place just under 1 tablespoon of filling in the center of each wrapper. Moisten the edges with water and fold in half without sealing.
- Pleat the front and press to seal, curving it into a crescent shape.
- Heat 2 tablespoons of oil in a large skillet and add half of the dumplings flat-side down. Cook over medium heat until golden and crisp.
- Add the water (or broth) and cover immediately to steam. Set a timer for 8 minutes.
- Remove the cover and reduce heat to low for 1-2 more minutes to let the remaining moisture cook off. Transfer to a plate and repeat with the second half of the dumplings.
- Garnish with chili crisp, chives, and toasted sesame seeds.
Notes
Ensure wrappers stay covered with a damp cloth to prevent them from cracking.
You can adjust the seasonings according to your taste.
