This Protein Banana Bread features a delicious combination of ripe bananas and creamy cottage cheese, making it a tasty and healthy snack. It’s easy to prepare and perfect for breakfast or as a delightful treat anytime!

- 1 cup cottage cheese, blended to smooth
- 2 large bananas, brown, ripe, mashed
- 2 large eggs
- 1/3 cup butter, melted and cooled
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 3/4 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
Instructions
- Preheat the oven to 350 F and line a 9×5" loaf pan with parchment paper.
- Blend the cottage cheese until smooth, then mash the ripe bananas in a bowl. Add the smooth cottage cheese, sugar, vanilla, eggs, and melted butter to the mashed bananas. Mix until combined.
- In a separate bowl, mix the dry ingredients, then gradually combine them with the wet mixture until just combined. Optionally, add mini chocolate chips or crushed nuts at this stage.
- Pour the batter into the lined loaf pan and bake for 50-60 minutes. A toothpick inserted in the center should come out mostly clean with some moist crumbs. Allow to cool in the pan for 5 minutes, then lift out using the parchment paper and cool on a rack.
Notes
You can add mini chocolate chips or crushed nuts for added texture and flavor.
Make sure your bananas are well-ripened for the best sweetness and flavor.
Store leftover banana bread wrapped at room temperature for up to 3 days.
