Ingredients

  • 1 1/4 cup rolled oats, or oat flour
  • 1 cup plain 2% Greek yogurt
  • 2/3 cup milk
  • 2 eggs
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour, or whole wheat flour
  • Fresh berries, butter, and maple syrup, for topping


Instructions

  1. Preheat your waffle iron.
  2. Blend the oats until fine. If using oat flour, combine all ingredients in a large bowl.
  3. Add the Greek yogurt, milk, eggs, maple syrup, vanilla extract, baking powder, baking soda, and salt to the blender, and blend until smooth.
  4. Incorporate the flour last, pulsing until just combined.
  5. Pour 2/3 cup of batter into the preheated waffle iron and cook until lightly golden, about 2 to 2 1/2 minutes. Check for doneness before 2 minutes if necessary. Repeat with remaining batter.

Notes

For a gluten-free option, ensure the oats are certified gluten-free.
Top with your favorite fruits or a drizzle of extra maple syrup for added sweetness.
