- 1 cup plain 2% Greek yogurt
- 2/3 cup milk
- 2 eggs
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour, or whole wheat flour
- Fresh berries, butter, and maple syrup, for topping
Instructions
- Preheat your waffle iron.
- Blend the oats until fine. If using oat flour, combine all ingredients in a large bowl.
- Add the Greek yogurt, milk, eggs, maple syrup, vanilla extract, baking powder, baking soda, and salt to the blender, and blend until smooth.
- Incorporate the flour last, pulsing until just combined.
- Pour 2/3 cup of batter into the preheated waffle iron and cook until lightly golden, about 2 to 2 1/2 minutes. Check for doneness before 2 minutes if necessary. Repeat with remaining batter.
