Description

These Quesadillas In The Oven are packed with rich flavors from seasoned black beans, two types of cheese, and fresh pico de gallo. Perfect for a quick dinner or a satisfying snack, they are easy to prepare and bake to crispy perfection!


Ingredients

  • 1/2 cup canned black beans, drained and rinsed
  • 1 drizzle olive oil
  • 1/4 teaspoon each cumin, garlic powder, onion powder, and kosher salt
  • 1 large or 2 small green onions
  • 1 cup shredded cheddar cheese
  • 1 cup smoked mozzarella cheese
  • 1/2 cup pico de gallo
  • 8 6” tortillas (flour or corn)
  • for topping: guacamole, sour cream, salsa, cilantro


Instructions

  • Preheat the oven to 425 degrees Fahrenheit.
  • Drain and rinse the black beans. Mix them with olive oil and seasonings. Thinly slice the green onions.
  • Brush a baking sheet with olive oil. Place the tortillas on the sheet and rub them in the oil to coat.
  • On each tortilla, layer 2 tablespoons of cheddar cheese, 1 tablespoon of seasoned beans, 1 tablespoon of green onion, 2 tablespoons of smoked mozzarella, 1 tablespoon of pico de gallo, and a pinch of kosher salt. Optionally, add a drizzle of hot sauce. Fold each tortilla in half.
  • Brush the tops with more oil and bake for 8 minutes.
  • Flip the quesadillas and bake for another 6 to 7 minutes until they are browned and crispy.
  • Cut each quesadilla into 3 wedges and serve with cilantro, sour cream, guacamole, and extra pico de gallo for dipping.

Notes

Feel free to customize the toppings according to your taste.
These quesadillas freeze well; cook them and then store for an easy future meal.
Experiment with different cheeses or add cooked chicken for extra protein.
