This Salmon with Capers dish offers irresistible flavors with simple preparation. It’s a healthy meal featuring fresh salmon, zesty lemon, and a delicious butter sauce, perfect for a quick dinner at home.

- 4 (6-ounce) salmon fillets
- olive oil, for brushing
- 1/2 teaspoon kosher salt, plus more for brining
- 1/2 teaspoon freshly ground black pepper
- 6 lemon slices (from 1 lemon)
- fresh oregano or thyme sprigs (optional)
- 3 tablespoons salted butter
- 2 tablespoons jarred capers, drained
- 1 garlic clove, grated
- to garnish: finely chopped italian parsley, chives, or other herbs
Instructions
- Preheat the oven to 325°F.
- In a shallow dish, mix together 4 cups of room temperature water and 3 tablespoons of kosher salt. Submerge the salmon in the water for 15 minutes.
- Place a large sheet of aluminum foil on a baking sheet and brush it with olive oil. Pat the salmon fillets dry, then place them on the foil. Season with 1/8 teaspoon of kosher salt and fresh ground pepper. Arrange lemon slices and herbs around the salmon without covering them.
- Bake the salmon in the foil for 10 minutes. Open the foil to allow steam to escape and continue baking for an additional 3 to 6 minutes until the salmon is tender and pink in the center, aiming for an internal temperature of 125-130°F.
- While the salmon cooks, melt the butter over low heat. Stir in the capers and garlic, cooking until fragrant for around 3 minutes.
- Once the salmon is finished, drizzle with lemon juice from the remaining slices and spoon the caper butter sauce over each fillet. Garnish with chopped parsley or chives.
