- 20-24 oz pkg frozen pancakes
- 1 lb breakfast sausage
- 1 tbsp maple syrup optional
- 8 eggs
- 1 1/2 cups heavy cream
- 1 cup milk
- 1 tsp vanilla extract
- 2 tbsp sugar

Instructions
- Lightly spray a 9×13" baking dish with non-stick cooking spray.
- Cut the pancakes in half and layer them in the prepared dish with the cut side down, creating three equal rows.
- In a skillet, cook the sausage, breaking it up until it's no longer pink. Stir in the maple syrup and drain any excess fat.
- Spread the cooked sausage evenly on top of the pancakes, ensuring it gets between the layers.
- In a mixing bowl, whisk the eggs, cream, milk, vanilla extract, and sugar until smooth. Pour this mixture over the meat and pancakes.
- Cover the dish with cling wrap and refrigerate overnight.
- The next morning, preheat the oven to 350 degrees. Remove the wrap and bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
- Let the casserole rest for a few minutes before slicing and serving. Drizzle with extra maple syrup if desired.
