Description

Ingredients

  • 20-24 oz pkg frozen pancakes
  • 1 lb breakfast sausage
  • 1 tbsp maple syrup optional
  • 8 eggs
  • 1 1/2 cups heavy cream
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 tbsp sugar
  • maple syrup for serving


Instructions

  • Lightly spray a 9×13" baking dish with non-stick cooking spray.
  • Cut the pancakes in half and layer them in the prepared dish with the cut side down, creating three equal rows.
  • In a skillet, cook the sausage, breaking it up until it's no longer pink. Stir in the maple syrup and drain any excess fat.
  • Spread the cooked sausage evenly on top of the pancakes, ensuring it gets between the layers.
  • In a mixing bowl, whisk the eggs, cream, milk, vanilla extract, and sugar until smooth. Pour this mixture over the meat and pancakes.
  • Cover the dish with cling wrap and refrigerate overnight.
  • The next morning, preheat the oven to 350 degrees. Remove the wrap and bake for 50-60 minutes until a toothpick inserted in the center comes out clean.
  • Let the casserole rest for a few minutes before slicing and serving. Drizzle with extra maple syrup if desired.

Notes

Make sure to fully drain the sausage to avoid a greasy casserole.
This dish can be prepared a day ahead for an easy morning brunch.
