Ingredients

  • 1 pound ground sweet italian sausage
  • 1 medium onion diced
  • 6 cloves garlic finely-minced
  • 3 tablespoons tomato paste
  • 2 teaspoons italian seasoning
  • ¼ teaspoon fine salt
  • 32 ounces reduced-sodium chicken broth
  • 1 28-ounce can crushed tomatoes
  • 1 10-ounce package refrigerated cheese tortellini or frozen
  • 5 ounces baby spinach leaves
  • – ½ cup heavy cream or to taste
  • grated pecorino romano or parmesan for serving


Instructions

  1. In a soup pot over medium heat, combine the ground sausage and diced onion. Cook for 10-12 minutes, crumbling the sausage until fully cooked and no pink remains. Drain excess fat if desired.
  2. Stir in the tomato paste and minced garlic, cooking for an additional 5 minutes until the tomato paste begins to darken. Mix in the Italian seasoning and salt.
  3. Deglaze the pot with a bit of chicken broth, then add the remaining broth and crushed tomatoes. Stir thoroughly.
  4. Allow the soup to simmer for 15 minutes, then introduce the tortellini and continue to simmer according to package instructions, usually 3 minutes.
  5. Once cooked, remove the pot from heat and mix in the heavy cream and baby spinach leaves. Stir until the spinach wilts. Serve hot with grated Pecorino Romano or Parmesan on top.

Notes

Feel free to adjust the amount of heavy cream based on your taste preference.
For a lighter version, substitute the heavy cream with milk or a non-dairy alternative.
