- 3 tablespoon extra virgin olive oil
- 2 large zucchini/courgette, about 500 g (1.1 lbs)
- 1 large brown/yellow onion
- 3 cloves garlic, finely chopped
- 1 teaspoon dried oregano
- ½ teaspoon lemon zest
- 1 tablespoon lemon juice
- 2 tablespoon fresh mint leaves, finely chopped
- sea salt and freshly ground black pepper, to taste
Instructions
- Trim the zucchini tops and ends, and slice into 1 cm (½ inch) pieces. Slice the onion into 1.5 cm (1 inch) pieces after peeling.
- Heat the olive oil in a large frying pan over medium-high heat. Add the zucchini and onion, sauté for 10-12 minutes, stirring regularly for even cooking. Season with salt and pepper.
- When the vegetables are nearly cooked through, add the garlic and sauté for 1 minute, being cautious not to burn it.
- Mix in the dried oregano, lemon zest, and lemon juice, and cook for another minute before turning off the heat. Adjust the seasoning as necessary.
- Transfer to a bowl or platter and garnish with fresh mint.
Notes
For best flavor, use fresh ingredients, especially the mint.
Adjust garlic according to your taste preference.
