- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground ginger

- 1/2 teaspoon ground cloves
- 1/2 teaspoon kosher salt
- 3/4 cup unsulphured molasses
- 1 cup boiling water
- 1/2 cup butter, melted
- 2/3 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- powdered sugar, to top
- homemade whipped cream, for serving (optional but recommended!) or cream cheese frosting
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9 x 13″ baking dish with butter.
- In a medium bowl, combine flour, baking powder, baking soda, ginger, cinnamon, cloves, and kosher salt, whisking well.
- In another medium bowl, mix together molasses and boiling water. Stir in melted butter and sugars, then add eggs and whisk until combined.
- Combine the wet and dry ingredients, whisking until the mixture is smooth.
- Transfer the batter into the prepared baking dish and bake for 30 to 40 minutes, until the cake springs back when touched and a toothpick comes out clean or with moist crumbs.
- Let the cake cool to room temperature before dusting with powdered sugar. Serve with whipped cream.
Notes
Make sure to use unsulphured molasses for the best flavor.
Allow the cake to cool fully before frosting to avoid melting any toppings.
