This Slow Cooker Cowboy Casserole delivers mouthwatering flavors at home. With ground beef, cheesy goodness, and crispy tater tots, it’s perfect for family dinners or gatherings.
Ingredients

- 1 lb ground beef (browned and drained)
- 1 can (15 oz corn, drained)
- 1 can (10.5 oz cream of mushroom or cream of chicken soup)
- ½ cup sour cream
- 1½ cups shredded cheddar cheese (mild or medium)
- 1 small onion (diced)
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 bag (about 20 oz frozen tater tots)
Instructions
- Spray the slow cooker insert with nonstick spray.
- Mix ground beef, corn, soup, sour cream, cheese, onion, garlic powder, salt, and pepper in the slow cooker.
- Layer the tater tots on top.
- Cover and cook on Low for 4–5 hours or High for 2–3 hours until hot and bubbly.
- Optional: Broil in a baking dish for 2–3 minutes to brown tater tots.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Use a meat thermometer to ensure beef is cooked safely before adding to the slow cooker.
