- ¾ teaspoon kosher salt
- ½ teaspoon cinnamon
- ¼ teaspoon ginger
- 1 pinch allspice
- 1 teaspoon vanilla extract added at the end of cooking
- Fresh thyme chopped for garnish optional
Instructions
- Place the carrots in the bottom of a slow cooker crock, ensuring there is enough space to stir them.
- In a separate bowl, whisk together the melted butter, brown sugar, honey, kosher salt, cinnamon, ginger, and allspice until well combined.
- Pour the mixture over the carrots and toss them to ensure they are evenly coated.
- Cook on HIGH for 3 hours, or until the carrots are tender. For a slower option, you can cook on LOW for 6-8 hours, but the carrots may become mushier.
- Once cooked, stir in the vanilla extract and optional fresh thyme before serving.
- For a thicker glaze, remove the lid and cook on HIGH for an additional 15 minutes or transfer the liquid to a saucepan and simmer on low until thickened. Pour over the carrots before serving.
