- 3-4 pound pork roast
- 2 tbsp olive oil
- 1 cup chicken broth
- 1 tsp rosemary
- 1 tsp thyme
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Score the fat side of the pork roast lightly.
- Mix rosemary, thyme, garlic powder, salt, and pepper in a bowl.
- Brush olive oil on the pork roast and rub the seasoning mixture all over.
- Place the roast in the slow cooker, pouring the chicken broth around it.
- Cook on low for 6-8 hours or high for 3-4 hours until the internal temperature reaches 160°F.
- Let the pork rest for 10 minutes before slicing.
Notes
For best flavor, use a pork shoulder or butt roast with some marbling.
You can substitute olive oil with avocado oil if preferred.
Store leftovers in an airtight container for up to 4 days.
