- 6 bell peppers
- 1½ pounds 93% lean ground beef
- 1½ cups cooked rice
- ½ cup parmesan cheese
- ¼ cup finely chopped fresh parsley
- 4 cloves garlic, minced
- 2 teaspoons salt
- ½ teaspoon pepper
- ½ teaspoon oregano
- 24 ounces marinara sauce, (1 jar)
Instructions
- Cut the tops off the bell peppers and remove seeds and ribs, creating a hollow shell.
- In a large bowl, mix together ground beef, cooked rice, parmesan cheese, parsley, garlic, salt, pepper, and oregano until well combined.
- Puncture holes in the bottoms of each pepper, then fill each with ⅙ of the meat mixture.
- Pour about ¾ of marinara sauce at the bottom of the slow cooker, placing each filled pepper upright on the sauce, and topping with the remaining sauce.
- Cook on low for 3-4 hours or until the internal temperature reaches 160˚F. Serve the stuffed peppers on a bed of marinara sauce.
Notes
Ensure the ground beef is well browned for the best flavor.
You can substitute ground turkey for a leaner option.
