Description

These smoked baked potatoes are a delightful blend of flavors, featuring tender potatoes seasoned with olive oil and kosher salt. Perfect as a quick dinner or comforting side, they transform any meal into something special!


Ingredients

  • 4 medium potatoes
  • 3/4 c salt, kosher is best, larger granules
  • 1/4 c olive oil


Instructions

  • Pierce the potatoes all over with a fork or knife to vent them.
  • Fill a flat bowl or container with kosher salt.
  • Rub olive oil on each potato and roll it in the salt.
  • Repeat for all potatoes and prepare to smoke them.
  • Set the smoker to 250°F and add your choice of wood chips. Smoke the potatoes for about 2 hours or until tender, checking with a knife or fork.
  • Let the potatoes rest for a few minutes after smoking.
  • Slice the potatoes open and fill with chili for a main dish or serve with sour cream and butter as a side dish.
