Description
This Smoked Mississippi Pot Roast features a tender chuck roast seasoned to perfection and smoked for hours, resulting in an incredibly flavorful meal. Simple to prepare with minimal ingredients, it’s perfect for a quick dinner or a hearty family gathering.

- 3 1/2 lb chuck roast
- 2 tsp salt
- 1 1/2 tsp garlic powder
- 1 1/2 tsp onion powder
- 1 1/2 tsp smoked paprika
- 1 tsp pepper
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1 1 oz pkt au jus gravy mix
- 1 1 oz pkt ranch dressing mix
- 1/2 cup butter cut into 8 slices
- 8-10 pepperoncini peppers
- 1/3 cup water
Instructions
- Combine salt, garlic powder, onion powder, paprika, pepper, chili powder, and cumin in a small bowl.
- Rub the seasoning blend all over the chuck roast evenly.
- Place the seasoned roast in a preheated smoker set at 225° and smoke for 2 hours.
- Transfer the roast to a disposable 9×13" baking pan.
- Sprinkle both seasoning packets over the roast, then add the butter slices and pepperoncini.
- Pour water into the pan and cover tightly with aluminum foil.
- Return the pan to the smoker and cook for an additional 2 to 2 1/2 hours.
- Slice or shred the roast and serve warm.
Notes
For extra flavor, consider adding other spices to the rub.
Ensure the smoker is preheated before placing the roast inside for even cooking.
Leftovers can be stored in an airtight container for up to 3 days.
