- ½ cup milk (118 grams)
- 2 tablespoons honey (40 grams)
- 2/3 cups warm water (157 grams)
- 2 teaspoons instant or active dry yeast (8 grams)
- 1/2 cup whole wheat flour (70 grams)
- 2 1/2 cups all purpose flour (350 grams)
- 1 ½ teaspoons kosher salt (8 grams)
- 2 tablespoons rolled oats, roughly chopped, for topping
Instructions
- In a small saucepan, melt the butter over low heat, then combine it with warm milk, honey, warm water, and yeast in a mixing bowl.
- In another bowl, mix whole wheat flour, all-purpose flour, and salt. Combine dry ingredients with wet ingredients.
- Knead the dough for 8 minutes using a stand mixer or by hand until it feels smooth and stretchy.
- Shape the kneaded dough into a boule and place it in a bowl covered with a towel to rise for 1 hour.
- After rising, shape the dough into a loaf and place it in a greased loaf pan. Let it rise for another hour covered with a towel.
- Preheat the oven to 350°F while the dough is rising.
- Brush the top of the loaf with water, add oats if desired, and bake for 35-37 minutes or until golden brown. The internal temperature should reach 190°F.
- Cool the bread on a rack for at least 90 minutes before slicing.
Notes
For best results, allow the bread to cool completely before slicing to maintain its texture.
This bread can be stored at room temperature for 3 to 5 days wrapped in plastic, or frozen for up to 3 months.
Use an electric knife for easier slicing, if available.
