These Spicy Garlic Noodles are a delightful blend of garlic, sesame, and a hint of chili, offering a quick and satisfying meal that pleases the palate.

- 8 oz noodles (lo mein, spaghetti, or ramen)
- 3 tbsp shiitake mushroom oil (or sesame oil)
- 5 cloves garlic (minced)
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1/2 tsp chili flakes
- 2 green onions (sliced)
- 1 tsp sesame seeds
- chili oil (optional)
- 1/2 cup water (from boiling noodles)
- 1 tsp garlic powder
- 1 tsp smoked paprika
- salt & pepper to taste
Instructions
- Boil noodles according to package directions, reserving 1/2 cup of starchy water.
- Heat shiitake mushroom oil in a large pan and sauté minced garlic until fragrant.
- Mix soy sauce, brown sugar, and chili flakes with the garlic until the sugar dissolves.
- Add cooked noodles, reserved water, garlic powder, smoked paprika, salt, and pepper; toss to coat.
- Remove from heat, sprinkle with green onions and sesame seeds, and drizzle with chili oil if desired.
Notes
Reserve enough noodle water to create a creamy sauce texture.
Avoid burning garlic by sautéing over medium heat.
Feel free to adjust the amount of chili flakes based on personal spiciness preference.
