Description

This Spinach Dip Pasta Salad combines creamy flavors with fresh spinach for an irresistible dish that’s perfect for gatherings or a satisfying meal at home. It’s easy to make, full of flavor, and sure to please everyone!


Ingredients

Scale
  • 1 lb penne pasta cooked to al dente, drained, and cooled
  • 10 oz fresh baby spinach
  • 2 cups sour cream
  • 1/2 cup mayo
  • 1 1/4 tsp garlic powder
  • 1 1/4 tsp onion powder
  • salt & pepper to taste
  • 2 tsp dried parsley optional
  • 1/4 cup artichoke hearts drained, rinsed, and diced (optional)


Instructions

  • Sauté the spinach in a non-stick pan, stirring occasionally, just until wilted but not mushy. Remove the skillet from heat and let the spinach cool completely.
  • In a large mixing bowl, combine all ingredients except the pasta and stir until evenly mixed.
  • Add the pasta to the spinach dip mixture and stir to combine.
  • Cover and chill for at least four hours or up to overnight before serving.

Notes

For a little extra flavor, consider adding diced bell peppers or olives.
Feel free to adjust the seasoning according to your preference, especially with salt and pepper.
This salad can be made a day ahead of time for better flavor.
