Description

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups frozen chopped spinach (about 10 ounces), thawed and drained
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup parmesan cheese, grated
  • 2 large eggs, divided (one for egg wash)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon ground black pepper (or to taste)
  • 1 (10×15-inch) sheet puff pastry, thawed if frozen


Instructions

  • Preheat the oven to 375°F. Generously grease a 12-cup muffin pan with cooking spray or butter, and set aside.
  • Thaw the spinach completely, then use a clean kitchen towel or paper towels to squeeze out as much liquid as possible.
  • Heat butter in a large saucepan over medium-high heat. Add the diced onion, minced garlic, and drained spinach. Sauté for approximately 3-5 minutes until most moisture evaporates. Remove from heat and set aside to cool for 5 minutes.
  • In a large mixing bowl, combine the cooled spinach mixture, fresh parsley, crumbled feta, grated parmesan, one egg, salt, and pepper. Mix until well combined, then chill in the fridge for 10 minutes.
  • Roll out the puff pastry on a lightly floured surface and cut the sheet into 12 equal rectangles (about 3 by 4 inches each). You will need to make 3 vertical cuts and 2 horizontal cuts.
  • Press one rectangle of pastry into each cup of the prepared muffin pan. Spoon about 2 tablespoons of the filling into each pastry. Fold the four corners of the pastry over the filling and pinch lightly to seal, leaving some of the filling exposed on top.
  • In a small bowl, beat the remaining egg with a fork. Brush the egg wash evenly across the top of each sealed pastry.
  • Bake for 25-30 minutes until the pastries are puffed and golden brown. Allow to cool for 5 minutes.
  • Use a silicone spatula or knife to gently loosen each puff from the pan, then carefully remove them. Serve warm or at room temperature.

Notes

Ensure the spinach is thoroughly drained to prevent soggy pastries.
These bites can be made ahead of time and reheated before serving for convenience. You can also experiment with different cheeses or herbs to customize the flavor.
