Description

These St. Patrick’s Day Chocolate Chip Cookie Bars offer an irresistible flavor that’s perfect for festive gatherings. With a simple prep using butter, sugars, M&M’s, and chocolate chips, this recipe is a must-try for homemade desserts.


Ingredients

  • ½ cup unsalted sweet cream butter softened
  • ½ cup light brown sugar packed
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon cornstarch optional but recommended for softer bars
  • 1½ cups all-purpose flour
  • ¾ cup green m&m’s
  • ¾ cup semi-sweet chocolate chips


Instructions

  1. Preheat the oven to 350°F. Line a 9×9 baking dish with parchment paper.
  2. In a stand mixer or large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract and mix until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cornstarch.
  5. Gradually add the dry ingredients into the wet ingredients and mix just until combined. Do not overmix.
  6. Fold in the green M&M’s and chocolate chips.
  7. Press the dough evenly into the prepared baking dish.
  8. Top with a few extra M&M’s and chocolate chips for a pretty finish.
  9. Bake for 20–25 minutes, or until the edges are lightly golden and the center is just set.
  10. Remove from the oven and allow the bars to cool completely before cutting into squares.

Notes

For softer bars, include the cornstarch in the recipe.
Make sure not to overmix the dough to keep the bars tender.
Let the bars cool completely for easier cutting.
