Description

  • 3 cups diced strawberries
  • ¼ cup granulated sugar
  • ⅓ cup orange juice
  • 1 cup multipurpose gluten free flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 2 rounded tablespoons cornstarch mixed with 3 tablespoons water
  • ½ cup unsalted butter or vegan baking stick, room temperature
  • ½ cup plus 2 tablespoons granulated sugar
  • ¾ teaspoon pure vanilla extract


Instructions

  1. Preheat your oven to 375°F and lightly grease an 8-inch square or round baking dish.
  2. In the greased dish, combine diced strawberries, ¼ cup granulated sugar, and orange juice.
  3. In a medium bowl, whisk together gluten free flour, baking powder, and kosher salt. Set aside.
  4. In a small bowl, mix together cornstarch and water until it forms a thin liquid.
  5. In a large mixing bowl, beat unsalted butter and ½ cup plus 2 tablespoons granulated sugar until creamy, about 1-2 minutes.
  6. Slowly add the cornstarch mixture and vanilla extract to the creamed mixture until combined.
  7. Gradually mix in the gluten free flour mixture until just blended; the batter will be sticky.
  8. Using a tablespoon or cookie scoop, dollop the batter over the strawberries, trying to cover as much of the strawberries as possible.
  9. Smooth out the batter using a butter knife or icing spatula. If sticky, wet fingers may help.
  10. Bake for 45-47 minutes until the filling is bubbling and the topping is golden brown. Place a baking sheet below to catch any overflow.
  11. Let cool for about 15 minutes before serving, as the filling will be very hot.
  12. Top with powdered sugar, ice cream, or serve as is.

Notes

For extra flavor, consider adding a pinch of cinnamon to the topping mixture.
Serve warm for the best taste, especially with a scoop of vanilla ice cream.
