  • 1 cup chopped fresh strawberries
  • 1 tablespoon sugar
  • 1 cup unsalted butter (softened)
  • 8 ounce cream cheese (at room temperature)
  • 1 cup sugar
  • 4 eggs (at room temperature)
  • 15.25 ounce strawberry cake mix
  • 1 cup all-purpose flour
  • 2 tablespoons strawberry puree (reserved from above)
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons fresh lemon juice


Instructions

  1. Preheat the oven to 325°F and prepare a 12-cup bundt pan with baking spray or butter and flour. Set it aside.
  2. Blend chopped strawberries with 1 tablespoon of sugar in a blender or food processor until smooth. Reserve 2 tablespoons of the puree for the glaze.
  3. In a stand mixer fitted with the paddle attachment, combine butter, cream cheese, and 1 cup of sugar. Beat until smooth and creamy.
  4. Add the eggs one at a time, mixing on medium speed and scraping down the bowl after each addition.
  5. Mix in the strawberry cake mix and flour on low speed until just incorporated, keeping the batter thick.
  6. Stir in the strawberry puree (except for the reserved 2 tablespoons). Mix until well combined, scraping the sides of the bowl as necessary.
  7. Spread the batter evenly in the prepared bundt pan. Bake for approximately 60-65 minutes or until a toothpick comes out clean from the center.
  8. Allow the cake to cool in the pan for about 15 minutes, then loosen the sides with a knife and invert it onto a serving plate to cool completely.
