Instructions
- Soak the cashews and sun-dried tomatoes in hot water for 1-2 hours or microwave for 2 minutes.
- In a saucepan, gently simmer garlic in olive oil for about 15 minutes until fragrant and pale yellow.
- Blend the soaked cashews, garlic (with oil), sun-dried tomatoes, tomato paste, red wine vinegar, dried herbs, and salt until chunky.
- Continue blending until smooth, adding water if necessary to achieve desired consistency.
- Taste and adjust flavors with more salt or vinegar if needed.
- Transfer the spread to a bowl, drizzle with olive oil, and serve or store in the fridge.
