Ingredients

  • 1 cup creamy almond butter
  • 1 cup mashed sweet potato
  • 1/2 cup maple syrup
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3/4 cup chocolate chips, divided
  • flaky sea salt for sprinkling, optional


Instructions

  1. Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper and lightly spray with nonstick cooking spray.
  2. In a large bowl, whisk together the almond butter, sweet potato, maple syrup, egg, and vanilla extract until smooth.
  3. Stir in the cocoa powder, baking soda, and sea salt until fully incorporated with no streaks.
  4. Fold in ½ cup of chocolate chips, reserving the other ¼ cup for topping.
  5. Spread the batter evenly into the pan and sprinkle the remaining chocolate chips on top.
  6. Bake for 24 to 30 minutes, or until the center is set and a toothpick comes out mostly clean. Check early to be safe.
  7. Remove from the oven, sprinkle with flaky sea salt if desired, and let cool in the pan. Cut into squares.

Notes

Cooling the brownies in the pan helps them set up for easier slicing.
Feel free to substitute almond butter with another nut or seed butter if preferred.
