Ingredients

  • 7 to 8 ounces wide rice noodles
  • 3 to 4 tablespoons oyster sauce
  • 2 teaspoons light brown sugar
  • 3 tablespoons soy sauce
  • 2 tablespoons hot water
  • 2 tablespoons vegetable oil or toasted sesame oil
  • 1 tablespoon roasted garlic paste
  • 1 up to 3 teaspoons chili garlic sauce
  • 1/2 large yellow onion very thinly sliced
  • 1 red pepper very thinly sliced
  • 1/2 pound (8 ounces) chicken thighs cut into 1-inch pieces
  • 3 green onions thinly sliced
  • 1 bundle thai basil or regular basil


Instructions

  1. Prepare the rice noodles according to package instructions until tender, then drain.
  2. In a liquid measuring cup, combine the oyster sauce, brown sugar, 2 tablespoons of soy sauce, and hot water; set aside.
  3. Heat vegetable or sesame oil in a large skillet or wok over high heat until shimmering.
  4. Stir in the roasted garlic paste and chili garlic sauce, cooking for 30 to 60 seconds until fragrant; reduce heat to prevent burning.
  5. Add the onion and red pepper, stir frying for 1 minute. Push the vegetables aside and add the chicken in an even layer.
  6. Let the chicken sear for about 30 seconds, then add the remaining tablespoon of soy sauce. Cook, stirring, until the chicken is cooked through (2-4 minutes).
  7. Add the cooked noodles, prepared sauce, and green onions to the skillet. Increase heat and toss to coat, letting sit for 10-20 seconds before tossing again.
  8. Continue cooking until the noodles are darkened and slightly charred (about 1-3 minutes), adjusting with more soy or oyster sauce if needed.
  9. Remove from heat and add the basil leaves, tossing until just wilted. Serve immediately.

Notes

Ensure the rice noodles are cooked to your liking before draining.
Adjust the amount of chili garlic sauce based on your heat preference.
Thai basil gives a unique flavor, but regular basil works fine if that’s what you have.
