This Tiramisu Cake combines rich flavors of coffee and mascarpone in a light, fluffy cake. Perfect for gatherings or just a sweet treat at home!

- 6 large eggs, room temperature
- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 4 ounces cream cheese, room temperature
- 4 ounces mascarpone cheese, cold
- 1 cup butter, room temperature (2 sticks)
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder, for garnish
Instructions
- Preheat the oven to 350°F and grease the bottom of three 6-inch round cake pans with nonstick baking spray. Line the bottoms with parchment paper.
- In a stand mixer, add eggs and beat on medium-high, gradually adding granulated sugar until the batter reaches the ribbon stage after 5-8 minutes.
- Sift in the flour, baking powder, and ground cinnamon, then gently fold into the egg mixture without deflating the eggs.
- Divide the batter across the prepared pans and bake for 15-18 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then run a knife around the edges and transfer to a wire rack to cool fully.
- Optional: Wrap the cooled cake layers in plastic wrap and freeze for at least 4 hours for easier frosting.
Notes
Using room temperature ingredients helps achieve a better batter consistency.
For an intense coffee flavor, brush the cake layers with additional espresso before frosting.
Ensure to handle the batter gently to maintain the airy texture from the beaten eggs.
