Description

These Toffee Chocolate Chip Cookies blend the sweetness of chocolate chips with the crunch of toffee bits. Simple to make, they come together quickly for a delightful treat perfect for any gathering or a comforting snack.


Ingredients

  • ½ cup old-fashioned oats
  • 2½ cups all-purpose flour
  • 1½ tsp baking soda
  • 1 tsp salt
  • ¼ tsp ground cinnamon
  • ¾ cup granulated sugar
  • ¾ cup light brown sugar
  • 1 cup unsalted butter, room temperature
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 2 cups mini chocolate chips
  • 1½ cups toffee bits


Instructions

  1. Line 3 baking sheets with parchment paper and set aside.
  2. Pulse oats in a food processor until finely ground.
  3. In a large bowl, combine ground oats, flour, baking soda, salt, and cinnamon; mix thoroughly.
  4. In a stand mixer, cream together both sugars and butter for 3-4 minutes until light and fluffy.
  5. Add eggs and vanilla extract, mixing on low speed until well combined.
  6. Gradually add the dry mixture, mixing until just combined.
  7. Fold in mini chocolate chips and toffee bits.
  8. Scoop about 2 tablespoons of dough, shape into balls, and place on prepared baking sheets.
  9. Chill the cookie dough balls in the refrigerator for 1 hour.
  10. Preheat the oven to 350°F.
  11. Bake for 18-20 minutes until edges turn light golden brown.
  12. Let cool for 5 minutes on baking sheets before transferring to a wire rack.

Notes

Ensure the butter is at room temperature for easier mixing.
For softer cookies, avoid overbaking; they should be soft when taken out of the oven.
You can substitute chocolate chips with your favorite mix-ins for variety.
