- 4 to 5 medium tomatoes
- 1/2 small red onion, sliced
- 2 ounces capers, drained
- 5 ounces feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 4 green onions, white and green parts chopped
- 1/4 cup olive oil, extra virgin
- 1/2 lemon, juiced
- 2 teaspoon red wine vinegar
- 2 garlic cloves, minced
- 1 teaspoon sumac, or spice of your choice
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- In a large mixing bowl, combine the tomatoes, red onion, capers, feta cheese, parsley, mint, and green onions.
- In a mason jar, add the olive oil, lemon juice, red wine vinegar, garlic, sumac, salt, and pepper. Shake well to mix.
- Pour half of the dressing over the salad and toss lightly. Taste and adjust with more dressing if needed. Serve immediately.
Notes
You can customize the salad by adding your favorite vegetables.
This salad is best enjoyed fresh, but leftovers can be refrigerated for a day.
Feel free to substitute the sumac with another seasoning of your choice.
