- 1 tbsp extra virgin olive oil
- ½ cup sweet onion, diced
- 2 cloves garlic, minced
- 1 tsp dried rosemary
- ½ tsp dried thyme
- 2 cans cannellini beans, drained and rinsed (15oz/540ml cans)
- 4 cups chicken broth
- 1 cup chopped spinach
- salt and pepper to taste
- grated parmesan for serving, optional
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook for 4 to 5 minutes until soft. Stir in minced garlic and herbs.
- Incorporate the drained beans and chicken broth, bringing the mixture to a boil.
- Lower the heat to medium-low and let it simmer uncovered for 15 minutes.
- Using a spoon, lightly mash some of the beans for a thicker consistency.
- Stir in the chopped spinach and cook for an additional 3 to 5 minutes until wilted.
- Season with salt and pepper to taste, then serve with grated Parmesan if desired.
Notes
For a vegetarian version, use vegetable broth instead of chicken broth.
Feel free to add other vegetables like carrots or celery for extra nutrition.
