Description

This veggie egg casserole features fresh vegetables, eggs, and seasoning, ensuring bursts of flavor in every bite. Perfect for a wholesome breakfast or brunch, it’s easy to prepare and delightful to share with family and friends.


Ingredients

  • 12 large eggs
  • 2 teaspoons everything bagel seasoning
  • 1 cup mushrooms, chopped
  • 1 can black beans, drained and rinsed
  • 1 large bell pepper, chopped
  • 1 cup kale, chopped
  • ¼ cup salsa
  • 1 cup milk
  • 1 medium zucchini, chopped
  • ¼ cup feta cheese


Instructions

  • Preheat the oven to 350°F (175°C). Spray a 9×13 baking dish with cooking spray.
  • Chop all vegetables and layer them in the baking dish. Sprinkle with everything bagel seasoning.
  • In a large bowl, whisk together the eggs, remaining seasoning, and milk. Stir in the salsa.
  • Pour the egg mixture over the vegetables and top with feta cheese.
  • Bake for 40-45 minutes until golden and set. Let cool for 10 minutes before serving.
